Those tiles shatter from line hits, from scatter symbols, or at random thanks to the pirate character.
Left-side tiles break the easiest, since line hits covering the first three reels come more readily. As the round goes on the tiles get tougher to shatter — fewer spots are left and the holdouts tend to sit in the fifth reel.
